Easy French Toast and Fruit

Ingredients

  • • 1 extra large egg
  • • 1 egg white
  • • 1 tsp sugar
  • • 1 tsp ground cinnamon
  • • 3 slices whole-grain bread (look for brands with extra fiber)
  • • 1/2 cup fresh fruit (strawberries, bananas, blueberries, or raspberries)
  • • 2 tsp sugar-free or light syrup

Instructions

  1. Heat a skillet coated with cooking spray over medium-high heat.
  2. Crack egg and egg white into bowl and add sugar and cinnamon. Beat with a fork until yolk and cinnamon are well mixed.
  3. Dip bread into egg mixture and remove, letting excess mixture fall back into the bowl.
  4. Cook bread in skillet for about 3 minutes on each side.
  5. Remove bread from skillet and top with syrup and fruit.
