Finally, a recipe that combines your sweet tooth fix for chocolate with a dose of protein to keep you feeling full, long after you enjoy this chocolaty treat. Bake up a yummy batch of these cupcakes to share with your kids (they will love them too) and store for later when you need a little something sweet.

Chocolate Marshmallow Protein Cupcakes
Ingredients
- For Cupcakes
- 2 cups moist-style chocolate cake mix (1/2 of an 18.25 ounce box)
- 2 scoops chocolate protein powder, I used Beverly International Chocolate UMP
- 5 egg whites
- 1 tbsp Splenda no calories sweetener (granulated)
- 1/8 tsp salt

- For Topping
- ¼ cup Jet-Puffed Marshmallow Crème
- 1 tsp skim milk
Instructions
- Optional: Top with mini marshmallows and semi-sweet chocolate chips
- Preheat oven to 350 degrees.
- In a shaker, mix UMP or other chocolate flavored protein with 1 ¼ cup water and shake well.
- In a large mixing bowl, combine cake mix, Splenda, and salt. Add egg whites and UMP mixture, then whisk until smooth.
- Line a 12-cup muffin pan with liners or nonstick spray. Evenly distribute cake mixture among the cups.
- Bake in the oven for 15 to 20 minutes. Remove from oven and let cool.
- To prepare topping, place marshmallow crème in a small dish and mix with skim milk.
- Once cupcakes have cooled completely, drizzle marshmallow glaze over them. If desired top with a few mini-marshmallows and a few chocolate chips. Refrigerate until ready to serve.
