This recipe takes the classic No Bake Cookie and adds some protein packed chocolate protein powder and a dash of coconut to make the recipe healthier for you and your kids. You will love the delicious chocolate taste and the added protein in every bite. Requiring no bake time, these cookies not only taste yummy but cook up fast too.
Ingredients
- 1/2 cup margarine or Smart Butter
- 1/2 cup Skim milk
- 4 Tbsp chocolate protein powder
- 1 Tbsp cocoa powder
- 1 1/2 cups Splenda Sugar Substitute or Stevia
- 1/2 cup all natural peanut butter
- 3 cups quick oats
- 1/4 cup unsweetened coconut flakes
- 2 tsp pure vanilla extract
Instructions
- Melt margarine in a saucepan and add milk, protein powder, Splenda, and cocoa powder.
- Bring to a boil for no more than a minute or until thick.
- Remove from heat and quickly add in the oats, coconut, peanut butter, and vanilla.
- Mix well.
- Using a pan lined with wax paper, press mixture into cookies or using a fork, add mixture to wax paper to make cookies.
- Let cool and enjoy.

I wonder how coconut oil would work as a substitute for the margarine–thoughts?
I saw on another blog where someone used a banana in place of the butter. Haven’t tried it yet, but she seemed to have great success with it.
