Kids in the Kitchen: After School Snacks

This is a great after school snack that your kids can make and enjoy eating!  My kids love to see this layered in a clear glass.  You can make this with your favorite store bought granola or you can make your own. See Homemade granola recipe that follows. WHAT YOU NEED: clear parfait or drinking glasses 1/2 cup of vanilla yogurt 1/4 cup of granola 1/3 cup of fresh berries of your choice. Start the layers with the yogurt being at the bottom of the glass , then layer with granola and then berries. Repeat layers again. Homemade Granola: 1/2 cup of brown sugar 1/2 cup of regional honey 1 tsp of vanilla 2 cups of old fashioned rolled oats 1 cup sliced almonds 1 cup of chopped walnuts 1/2 flax seeds 1 cup of shredded coconut (optional) 2 scoops of whey  protein powder (optional- for Adults) First preheat your oven to 325 degrees. In a saucepan, cook the brown sugar, honey and vanilla over medium heat until melted and constantly stirring.  In another bowl, mix the oats, seeds and nuts and coconut.  Add the sugar misture and gently toss until all is coated evenly. Then spread out in a thin layer onto a baking sheet that has been pre-treated with cooking spray and bake for 25 minutes. It is recommended to stir at least twice.  Remove the pan fro the oven and let cool.  Then break the granola into chunks and store in Ziploc bags for two weeks. Enjoy!
