I’m always looking for fast and easy dinner ideas to help me get a healthy meal on the table.  This is probably one of the reasons that I break out the crock pot at least once a week…it is so easy!  I love this simple recipe that I use to make Skinny Pork Tacos!  You only need a few ingredients and of course your crock pot.  Enjoy!

Skinny Pork Tacos

Ingredients

  • 1 lb pork tenderloin
  • 12 oz tomato salsa
  • 1 Tbsp chili powder
  • 1 Tbsp ground cumin
  • 1 Tbsp brown sugar
  • 1 Tbsp jalapeño peppers
  • 1 tsp cayenne pepper
  • 1 tsp salt
  • 3 cloves garlic, minced
  • 8 — 6" La Tortilla Factory Smart & Delicious™ Low-Carb, High Fiber Tortillas
  • 2 cups shredded lettuce
  • ½ cup tomatoes, diced
  • ½ cup reduced-fat, shredded 4-cheese Mexican
  • ¼ cup reduced-fat sour cream
  • Optional Toppings*:
  • avocado
  • *Optional ingredients are not included in the nutrition calculations.

Instructions

  1. Place pork tenderloin in a slow cooker.
  2. In a medium-sized bowl, mix tomato salsa, chili powder, cumin, brown sugar, jalapeño peppers, cayenne pepper, salt and garlic and pour over pork tenderloin.
  3. Cook on low for 8 hours or on high for 5 hours.
  4. Remove pork tenderloin from slow cooker and shred using a fork, pull against the grain of the meat. Return shredded pork tenderloin to slow cooker and cook for an additional 30 minutes.
  5. Serve ½ cup pork on warm tortillas with shredded lettuce, 2 Tbsp diced tomatoes, 2 Tbsp reduced-fat cheese and 1 Tbsp reduced fat sour cream on each tortilla.
