I’m sure Mac & Cheese is a family favorite in most households, especially with the little ones!  This recipe is not only delicious but healthy as it has extra protein and vegetables in each serving.  This recipe will also be especially helpful for moms with picky eaters!  I use the Steamfresh brand mixed vegetables in light cheese sauce but I am sure any brand of mixed vegetables in a lighter cheese sauce would work.

 

Cheesy Chicken and Veggie Mac

Serving Size: 4 servings

Cheesy Chicken and Veggie Mac

Ingredients

  • 8 oz. whole wheat pasta
  • 1 10oz. package Steamfresh Mixed Vegetables (broccoli, cauliflower, carrots) in light cheese sauce
  • 4 wedges laughing cow original swiss cheese
  • 1 cup chopped cooked chicken
  • 1/2 tsp garlic powder
  • 1/2 tsp pepper
  • 1/2 tsp salt

Instructions

  1. In a large pot, bring water to a boil.
  2. Add pasta and cook until tender.
  3. Microwave vegetables as directed and remove when finished.
  4. Drain pasta and return to pot.
  5. Add in vegetables with cheese sauce and cooked chicken.
  6. Open the Laughing Cow Cheese wedges and cook in a microwave for 30-45 seconds until soft.
  7. Add the Laughing Cow Cheese wedges to pasta/chicken/veggie mixture. Stir until mixed well and serve immediately.
