Homemade Strawberry Banana Ice Cream

If I told you there was a way to make low-fat, low-calorie, healthy, yet decadently tasty ice cream in your food processor in less than 5 minutes, would you believe me? Well, I just made it and my husband inhaled the whole batch, so I am going to make it again. This ice cream is dairy-free, vegan, rich in potassium, folate, Vitamins C and B6, low in sugar, and above all creamy, sweet and extremely satisfying when you are craving a snack. You can pre-make this ice-cream ahead of time or whip up a new batch every time you get a craving: it will work either way. If you like this recipe, try my healthy strawberry sorbet, too.

Homemade Strawberry Banana Ice Cream

Ingredients

  • 1 cup frozen strawberries
  • 1 medium frozen banana
  • 1-2 packets stevia (plant-based, zero-calorie sweetener)
  • 1/4 cup water or juice of your choice

Instructions

  1. Blend all ingredients until smooth in a high-speed blender or food processor. Serve immediately.
