An oil that can not only increase your metabolism but help with diabetes and soften your skin?? Can it be true? That is what many experts are saying about coconut oil!

Coconut oil has fatty acids that are digested by the body in a different way. Unlike other oils that enter into the bloodstream and circulate throughout the body, coconut oil fats go directly to the liver so they can be used as fuel. It has also been shown to help regulate the release of insulin in the body and lower blood sugar. This is excellent news for diabetics or prediabetics. Most experts suggest 1-2 Tbsp per day. You can use it in place of other fats or oils. Some people even spread it on their toast like butter! Now I personally haven’t done that, but I have substituted it for butter and shortening when baking with great results. Measure out the amount called for in the recipe and then warm it up in the microwave. (It will turn liquid)

Here is a healthy, quick chocolate chip cookie recipe that I make frequently at our house. Everyone loves these and as far as cookies go, they are pretty good for you!
