Coconut oil has fatty acids that are digested by the body in a different way. Unlike other oils that enter into the bloodstream and circulate throughout the body, coconut oil fats go directly to the liver so they can be used as fuel. Most experts suggest 1-2 tablespoons per day. You can use it in place of other fats or oils. Some people even spread it on their toast like butter! Now I personally haven’t done that, but I have substituted it for butter and shortening when baking with great results. Measure out the amount called for in the recipe and then warm it up in the microwave. (It will turn liquid)

Here is a healthy, quick chocolate chip cookie recipe that I make frequently at our house. Everyone loves these and as far as cookies go, they are pretty good for you!

Skinny Chocolate Chip Cookies: Go Loco with Coconut Oil!

Ingredients

  • 2 cups whole wheat flour
  • ¾ cup oats
  • ½ cup nuts (optional)
  • 1 c. semi sweet chocolate chips (I like Ghiradelli)
  • ¾ tsp. sea salt
  • ¾ tsp. baking soda
  • 2/3 c. agave
  • 2/3 c. coconut oil (melted)
  • 3 tbsp. Skim or Almond Milk
  • 1 tsp. vanilla

Instructions

  1. Oven at 350.
  2. Blend dry ingredients in a large bowl.
  3. Mix wet ingredients in another.
  4. Add wet ingredients into dry and blend well.
  5. Drop by tablespoon onto parchment lined cookie sheet.
  6. Bake for 10-12 minutes.
  7. Cool on a wire rack.
