Summer is here and it’s time for cookouts and barbeques!! Sometimes it is difficult to find healthy choices when it comes to this time of year. I usually try to take several dishes that are healthy and I know I can eat. Cut up veggies with low fat dip and fruit salads are some of the obvious healthy choices. Sometimes though, I like to take a ‘dish’ and that’s when I turn to this. It is low fat, but extremely delicious. Most people never know that it is a reduced calorie option and I get requests for the recipe all the time. It’s quick and easy too, which makes it a go-to choice for me in the summer!

Skinny Pistachio Pudding

Ingredients

  • 1 package sugar free pistachio pudding
  • 1 can of crushed pineapple
  • 1 container low fat or fat free Cool whip
  • Pistachios

Instructions

  1. Mix the pudding mix into the crushed pineapple (include the juice).
  2. Fold in the Cool Whip.
  3. Add fresh pistachios to the top.
  4. Chill before serving.
  5. Sometimes I will add mini marshmallows to the top if there will be lots of kids…they love marshmallows and a few won’t hurt them!
