Skinny Dark Chocolate Chip Cookies

Let’s face it. Baking and ‘skinny’ just don’t go hand-in-hand. So my love of muffins and my quest to eliminate the ‘muffin-top’ have been battling long enough. I have decided to turn the tables on cookies and cupcakes with a full pantry remodel. Last week, during my weekly trip down the baking aisle, instead of unbleached flour, sugar and butter, I threw whole wheat flour (which I have grown quite accustomed to), applesauce and agave nectar into my cart. Time for some experimenting. Who says health and cupcakes can’t be friends? My quest is not just to make a lighter calorie version of the heavy calorie sweets, but to actually transform them into something healthy (remember…light and healthy are two different things).

So my experiment began with the transformation of my favorite tried-and-true chocolate chip cookie recipe. And, after a little tweaking…success! OK, so the cookie has a cakey, muffin-like texture but they really are delicious. And with the ingredients that you will be using, these are a perfect pre-workout or between-meals snack. Skinny Dark Chocolate Chip Cookies

Ingredients

  • 2/3 C natural applesauce
  • 1 C agave nectar (in the sugar aisle)
  • 4 egg whites
  • 1 T pure vanilla
  • 3 C whole wheat flour (finely ground is best)
  • 1 teasp salt
  • 1 teasp baking soda
  • 1/2- 1 bag of dark chocolate chips

Instructions

  1. Preheat oven to 350* F. Whisk applesauce, agave nectar, egg whites and vanilla until combined.
  2. In a separate bowl, mix the flour, salt and baking soda.
  3. Slowly add wet ingredients to flour mixture and combine with rubber spatula. (The mixture will be sticky.)
  4. Pour in the dark chocolate chips and gently mix.
  5. Using 2 spoons, scoop and drop tablespoonfuls of dough onto baking sheet.
  6. Bake for 11 minutes, cool in pan for 5 minutes and transfer to a cooling rack until completely cool.
