Banana Chocolate Chip Bread

This Banana Chocolate Chip Bread is the first thing I ever baked for my husband, and I am almost certain it is the reason he asked me to marry him! I have modified my original recipe a bit over the years, omitting whole eggs for just whites and adding in ground flax to the mix…..but he doesn’t seem to mind

Banana Chocolate Chip Bread

Ingredients

  • ½ cup brown sugar
  • 4 egg whites
  • ⅓ cup unsweetened applesauce
  • ¼ cup unsweetened almond milk
  • 1 tsp vanilla
  • 1 cup ripe mashed bananas
  • Dry Ingredients
  • 2 cups whole wheat flour
  • ¼ cup ground flax
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp sea slat
  • 3/4 cup mini chocolate chips
  • ½ cup chopped, raw walnuts (optional)

Instructions

  1. Preheat oven to 350 and coat a 9x5 loaf pan with cooking spray.
  2. In a large bowl, combine all wet ingredients and set aside.
  3. In a medium bowl, combine all dry ingredients except for chocolate chips and walnuts, if using.
  4. Slowly add dry ingredients to the wet mix and stir until fully blended, being sure not to over stir.
  5. Gently fold in the chocolate chips (and walnuts) and pour into prepared pan.
  6. Bake for 55 mins or until toothpick comes out clean.
