This Banana Chocolate Chip Bread is the first thing I ever baked for my husband, and I am almost certain it is the reason he asked me to marry him! I have modified my original recipe a bit over the years, omitting whole eggs for just whites and adding in ground flax to the mix…..but he doesn’t seem to mind
Ingredients
- ½ cup brown sugar
- 4 egg whites
- ⅓ cup unsweetened applesauce
- ¼ cup unsweetened almond milk
- 1 tsp vanilla
- 1 cup ripe mashed bananas
- Dry Ingredients
- 2 cups whole wheat flour
- ¼ cup ground flax
- 1 tsp baking soda
- 2 tsp baking powder
- 1 tsp cinnamon
- ½ tsp sea slat
- 3/4 cup mini chocolate chips
- ½ cup chopped, raw walnuts (optional)
Instructions
- Preheat oven to 350 and coat a 9x5 loaf pan with cooking spray.
- In a large bowl, combine all wet ingredients and set aside.
- In a medium bowl, combine all dry ingredients except for chocolate chips and walnuts, if using.
- Slowly add dry ingredients to the wet mix and stir until fully blended, being sure not to over stir.
- Gently fold in the chocolate chips (and walnuts) and pour into prepared pan.
- Bake for 55 mins or until toothpick comes out clean.
