Skinny Grilled Chicken and Fruit Salad

Ingredients

    Salad:
  • 10-12 oz romaine lettuce
  • ½ cup carrots, shredded
  • ¼ cup reduced-fat, shredded cheddar cheese
  • ½ cup blueberries
  • ½ cup apples, diced
  • ½ cup strawberries, sliced
  • ½ cup mandarin oranges (if canned, in it's own juice)
  • 1lb grilled chicken tenders
  • Strawberry Balsamic Dressing:
  • 1 Tbsp low-sugar strawberry preserves
  • 1 Tbsp Balsamic vinegar
  • 3 Tbsp extra virgin olive oil
  • ⅛ tsp salt
  • ⅛ tsp black pepper

Instructions

  1. Wash and rinse romaine lettuce and pour into a large salad bowl.
  2. Top romaine lettuce with all other ingredients leaving out the chicken and mix well.
  3. After salad is mixed, top with grilled chicken and serve with Strawberry Balsamic dressing.
  4. To make the Strawberry Balsamic Dressing: mix all ingredients in a small bowl and whisk together for 1 minute.
