For those of you who don’t know, this post is being brought to you from New York.  Upstate, that is, NOT the City (aka: Totally Different Universe).  I absolutely love where I live- it’s the perfect mix of a little bit country and a little bit rock and roll.  This week, the boys and I decided to embrace the “little bit country”, and headed out to pick strawberries.  We got there just in time, because up here in our neck of the woods, strawberry season is just about over.  But we embraced it whole-heartedly and ended up coming home with stained hands, full bellies, and zillions of berries.

Since we ended up with way more fruit than we knew what to do with, I had to get creative. Here are the top five delicious recipes I came up with.  (Note: I use the term “recipe” very loosely.  Most of these ideas do NOT involve cooking.  That level of creativity would be way too intense for me.) Enjoy!

1. Slice and Eat: These end- of- season berries are dark red and super sweet.  Slice them up and put a bowl in front of your kids (or your self!)  No sprinkled sugar needed- these things will go down like candy all on their own.  What a fresh way to get some vitamins in!

2. Strawberry Shortcake:  Cake is one of my all time favorite foods, especially when it’s made from all recognizable ingredients (read: not a box).  Shortcake is super easy to make (and it’s not even supposed to look all neat and symmetrical and stuff- BONUS!). Use your hand mixer to blend up some whipped cream to make it extra homemade and tasty.

3. Perfect Parfait: Ha- get it- “perfect perfect”?! Vanilla greek yogurt (or even plain would work here), a layer of granola (or Kashi), and a layer of these pieces of nature’s candy. Breakfast that is fast, easy, healthy, and delicioso.  (Wow, three languages in one description.  I am so talented. ..and corny.)

4. Jam Out:  If you’re like me, you’re not likely to make jam because it’s *way* too labor intensive.  Well, you’re in luck today, Friends! Stovetop Jam only involves melting the berries with a little bit of sugar, boiling, simmering, and letting them sit at room temperature.  Your mixture won’t quite have that jelly-like consistency (because it won’t have any pectin in it), but it will make a beautiful spread/topping.   Three letters come to mind: Y-U-M.

5. Freeze ‘Em:  Frozen strawberries work like magic in smoothies.  Throw a few berries in your blender with a scoop of yogurt and some milk (I like either almond or coconut) and go to town.  No ice cubes necessary.  How easy is that?!?

And there you have it.  5 of the easiest things I can think of to do with strawberries.  And easy to me is perfect- perfect.
