These cookies are simply AMAZING!!! Low in sugar and jam packed with protein, carbs and healthy fats – you will not feel the least bit guilty about eating them!! Don’t be afraid of the black beans in the recipe – trust me you will NOT taste them!! My kids gobble these up!! They almost taste like a fudgy brownie!
Ingredients
- 1/4 cup oat flour
- 2 scoops chocolate protein powder
- 1 can black beans - rinsed/drained
- ¼ cup honey
- ½ cup almond butter or natural peanut butter
- 1/4 cup egg whites
- 1 tbsp vanilla extract
- 1/4 cup ground flax
- ¼ cup cocoa powder
- 1 tsp baking powder
- cinnamon
- ⅓ to 1/2 cup mini chocolate chips
Instructions
- Preheat oven to 350 F.
- Prepare baking sheets with parchment paper.
- Place all ingredients except for chocolate chips into a food processor and process until smooth - stop and scrape down sides if needed.
- Drop one rounded tbsp onto prepared baking sheets.
- Place in oven and bake for about 15-20 minutes...keep your eye on them, as you DO NOT want to over bake.
- Remove cookies from the oven, and let cool completely.
- They are GREAT straight from the fridge and can also be frozen!

Can I do without the flax
I have never hesitated giving my children protein powder on occasion…..and yes, they are great without the added flax as well, i just like to add it to all my baking, for the healthy fats and extra fiber.
I have tried different “healthy” cookies – usually the healthier, the worse they taste. These are amazingly good – they do taste like fudgy brownies! Trust me, they are worth making!!!!!!
