I’ve seen this recipe floating around Pinterest from Weight Watchers and thought I’d give it a try.  They were REALLY good – but not as crunchy as I thought they would be.  However, as a replacement for the full-of-fat fried chicken, I give them a thumbs up. I altered it slightly (I didn’t have dill or scallions as the original recipe does) but it was a great, easy, fast dish.  With three ingredients and 20 minutes, you can’t beat it!


Skinny Honey Mustard Chicken

Yield: 4 servings


  • 2/3 cup lite honey mustard dressing
  • 1 cup cornflakes, slightly crushed
  • 1 lb uncooked, boneless, skinless chicken tenderloins


  1. Preheat oven to 425 degrees. Lightly coat a baking dish with nonstick cooking spray and set aside.
  2. Set up a production line: chicken, honey mustard in a shallow bowl, crushed cornflakes in a shallow bowl.
  3. Dip chicken in dressing, then cornflakes, then gently place in the baking dish.
  4. Bake for 15 minutes or until chicken is golden and no longer pink in center.
