Here we go again, another fabulously healthy meal that is all in one pot. This is a tasty soup that recreates an old favorite, with lots of taste and plenty of protein!
Ingredients

- • 1-1/2 cups vegetable broth
- • 1 tsp. dried oregano leaves
- • 1 tsp. dried thyme leaves
- • 3 Tbsp. tomato paste
- • 1 tsp. ground cumin
- • 1 Tbsp. chili powder
- • 1/8 tsp. cayenne pepper
- • salt and black pepper to taste
- • 1 onion, chopped
- • 4 cloves garlic, minced
- • 2 (4 oz.) cans chopped green chilies, undrained
- • 3 (15 oz.) cans black beans, rinsed and drained
- • 2 (14 oz.) cans diced tomatoes, undrained
- • 2 red bell peppers, chopped
- • 1/4 cup chopped fresh cilantro
- • 1-1/2 cups shredded Cheddar cheese
Instructions
- 1. Combine all ingredients except cilantro and cheese in 3-4 quart slow cooker.
- 2. Cover and cook on low for 8 hours.
- 3. Stir in cilantro just before serving.
- 4. Serve with Cheddar cheese for topping.
