Slow Cooker Black Bean Chili

Here we go again, another fabulously healthy meal that is all in one pot. This is a tasty soup that recreates an old favorite, with lots of taste and plenty of protein!

Slow Cooker Black Bean Chili

Ingredients

  • Ingredients:
  • • 1-1/2 cups vegetable broth
  • • 1 tsp. dried oregano leaves
  • • 1 tsp. dried thyme leaves
  • • 3 Tbsp. tomato paste
  • • 1 tsp. ground cumin
  • • 1 Tbsp. chili powder
  • • 1/8 tsp. cayenne pepper
  • • salt and black pepper to taste
  • • 1 onion, chopped
  • • 4 cloves garlic, minced
  • • 2 (4 oz.) cans chopped green chilies, undrained
  • • 3 (15 oz.) cans black beans, rinsed and drained
  • • 2 (14 oz.) cans diced tomatoes, undrained
  • • 2 red bell peppers, chopped
  • • 1/4 cup chopped fresh cilantro
  • • 1-1/2 cups shredded Cheddar cheese

Instructions

  1. 1. Combine all ingredients except cilantro and cheese in 3-4 quart slow cooker.
  2. 2. Cover and cook on low for 8 hours.
  3. 3. Stir in cilantro just before serving.
  4. 4. Serve with Cheddar cheese for topping.
