Pumpkin COOKIES with MAPLE GLAZE…. yum, yum, and yum… and 60 calories and ZERO grams of fat per cookie?! These are a winner! My batch yielded 50 cookies and plenty of glaze

Ingredients
- 2 egg whites
- • 15oz can Pumpkin
- • 1 1/2 tsp. Cinnamon
- • 1/2 tsp. Nutmeg
- • 1 tsp. Baking Soda (not pictured, oops)
- • 1 cup Splenda Brown Sugar (I didn't have this and thought I did - another oops)
- • 2 cups All-Purpose Flour
- • 3 cups Oats
- • 1 cup Raisins (optional)
- • 1 cup Powdered Sugar
- • 1/2 tsp. Maple Flavoring
- • Milk
Instructions
- Whip your egg whites until they are fluffy
- Mix pumpkin into egg whites
- Mix-in cinnamon, baking soda, and nutmeg
- Mix-in brown sugar and flour
- Mix-in oats and raisins until combined (don't over mix)
- Place TBS size balls on a lightly greased cookie sheet. Smooth the balls down a little - these cookies don't spread, so they come out of the oven the same shape they go in :)
- Bake at 350 degrees F for 15 minutes.
- After cookies have cooled (yeah, I didn't wait.) - in a small bowl mix together powdered sugar, maple flavoring, and enough milk to make it the consistency of glaze. A LITTLE milk goes a LONG way!
- Drizzle glaze over cookies
