Skinny Maple-Glazed Pumpkin Cookies

 

Pumpkin COOKIES with MAPLE GLAZE…. yum, yum, and yum… and 60 calories and ZERO grams of fat per cookie?!  These are a winner! My batch yielded 50 cookies and plenty of glaze


Skinny Maple-Glazed Pumpkin Cookies

Serving size: 1 cookie

Ingredients

  • 2 egg whites
  • • 15oz can Pumpkin
  • • 1 1/2 tsp. Cinnamon
  • • 1/2 tsp. Nutmeg
  • • 1 tsp. Baking Soda (not pictured, oops)
  • • 1 cup Splenda Brown Sugar (I didn't have this and thought I did - another oops)
  • • 2 cups All-Purpose Flour
  • • 3 cups Oats
  • • 1 cup Raisins (optional)
  • • 1 cup Powdered Sugar
  • • 1/2 tsp. Maple Flavoring
  • • Milk

Instructions

  1. Whip your egg whites until they are fluffy
  2. Mix pumpkin into egg whites
  3. Mix-in cinnamon, baking soda, and nutmeg
  4. Mix-in brown sugar and flour
  5. Mix-in oats and raisins until combined (don't over mix)
  6. Place TBS size balls on a lightly greased cookie sheet. Smooth the balls down a little - these cookies don't spread, so they come out of the oven the same shape they go in :)
  7. Bake at 350 degrees F for 15 minutes.
  8. After cookies have cooled (yeah, I didn't wait.) - in a small bowl mix together powdered sugar, maple flavoring, and enough milk to make it the consistency of glaze. A LITTLE milk goes a LONG way!
  9. Drizzle glaze over cookies
