I am in love with pumpkin: pumpkin seeds, pumpkin soup, pumpkin bread, pumpkin rolls! YUM!!! However, when looking at our Thanksgiving menu, I always get a little disappointed with the dessert section. I know, I know, pumpkin pie is the traditional and much loved Thanksgiving dessert, but I am just not a fan. I am not sure what it is, but my dislike of this always present dessert had me searching for a healthy and delicious pumpkin Turkey Day treat… and here is what I found from AllRecipes.com.
Ingredients
- 1 cup Brown Sugar
- 3/4 cup Biscuit Baking Mix (I used Bisquik!)
- 2 Tbsp Ground Cinnamon
- 2 Tbsp Ground Nutmeg
- 2 Tbsp Ground Cloves
- 2 Tsp Ground Ginger
- 3 Tbsp Butter cubed
- 1 can Evaporated Milk, 12oz
- 2 eggs
- 1 can Pumpkin Puree, 15oz
- 1/4 cup Applesauce
- 1 Tbsp Vanilla Extract
Instructions
- Lightly grease a small (1-quart) slow cooker.
- Combine brown sugar, baking mix, cinnamon, nutmeg, cloves, and ginger in a food processor. Pulse 3 to 4 times to mix.
- Add butter, evaporated milk, and eggs, and pulse until combined, 5 to 6 pulses.
- Pour in pumpkin puree, applesauce, and vanilla extract and process until smooth, about 30 seconds.
- Pour the pumpkin mixture into the prepared slow cooker.
- Heat on low until very thick, about 4 hours.
