Ingredients:
• 1.5 lbs. Boneless Skinless Chicken Breast
• 8 oz. Reduced Fat Cream Cheese
• 1 package frozen broccoli
• 1 can Fat Free Cream of Chicken
• 1/2 cup Water
• 1 package Italian Dressing Mix
Place chicken in the bottom of your slow cooker
Mix dressing mix and water together, and then pour over your chicken in the slow cooker
Cook on LOW for 8 hours, or HIGH for 4 hours (until chicken is done.)
Remove chicken from the slow cooker and shred. Leave the liquid stock in the slow cooker.
Mix together soup and cream cheese (I found microwaving the two for a few seconds before stirring makes the mixing a lot easier)
Pour cream cheese mixture into the slow cooker and mix with the chicken stock.
Stir broccoli into the slow cooker mixture.
Add chicken back to the slow cooker and mix well.
Turn the slow cooker on HIGH and cook until heated through. (It took mine about 30 minutes)
I serve my husband’s meal over rice – but I eat it without.. Enjoy!

Love the recipes. Going to try the crockpot chicken and broccoli for sure. Thanks.
yay! so glad that you are going to try!! XO
Let me know what you think – I love this one because on a cold day, there is nothing better than warm comfort food ready when you walk in the door for dinner!
Yummy!!! This creamy chicken broccoli was amazing!!! My 17 month old daughter could not get enough of it!!! We ate it as is and with out the rice. This will definitely be a repeat dinner!!
Thanks for sharing and I am going to repeat without the rice as you suggested…so glad that you took the time to share!
XO
My two year old gobbles this one up too! Glad your little one is a fan as well!
The directions to mix dressing w/water and pour over chicken are missing from the printable version of the recipe. I am making this tonight! I hopes it’s yummy!
Thanks,
Michele
This recipe is delicious! I made my own italian dressing mix and my own cream of chicken soup to keep out the preservatives. My family loved it!! I will defintely make this again.
Made this tonight for my husband. Used fresh broccoli and made my own Italian dressing. Soooo good!! He’s happily taking the leftovers to work with him
This was really yummy but the chicken was kind of dry. I think next time I will try 2c of chicken broth instead of 1/2c of water and cook the chicken for 6 hours on low instead of 8 hours.
I made this tonight and my kids were showering me and my cooking skills with praise! We all loved it!!!! However, I served it over biscuits instead of rice, even though it was good all on its own. Easy and yummy…..will be making this frequently!
