I  need to start this week’s blog post with a great BIG thank you! “Once A Month Mom” -  you have saved this mom, from stress, headaches and what could of been a week FULL of leftovers! With 7 plus ice times for hockey, School Christmas concerts, and last minute gift shopping, this week has been a total blur.

Not having to worry about “what’s for dinner?” has been a  TOTAL blessing. Having that one extra task taken care of, makes my day run smoother and saves me SO much time!  I LOVE that all I have to do, is pull out one of my prepared meals from the freezer to thaw, pop it in the oven, or throw it in the crockpot and cook as instructed - SO SIMPLE!! My family is LOVING that there is more variety to their meals on busy nights as opposed to eating a big pot of the same thing

This week we have enjoyed the “Louisiana Red Beans and Rice”, my kids really liked it with a spoonful of sour cream and a little shredded cheese on top. The “Pumpkin Risotto” was also a big hit. I toasted some pumpkin seeds and sprinkled those on top to give the meal a little crunch. We had the “Loaded Veggie Quesadillas” one night with a bowl of soup. I  placed the quesadillas on a baking pan and warmed them in the ovenI baked the “Winter Pizza” for some girlfriends and I for lunch one day. ABSOLUTELY my favorite so far - WOW this may actually be the BEST pizza I have ever had! Thinking it will be GREAT as an appetizer on Christmas Eve as well.

With only a week left before Christmas, and still having SO much to do, I know that the “Once A Month Meals” are going to help tremendously!!
