Ingredients
- 2 cups white whole wheat flour
- 2 scoops vanilla protein powder
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 cups old fashioned oats
- 1 teaspoon pumpkin spice
- 1 teaspoon cinnamon
- 1/4 cup pure pumpkin
- 1 tablespoon vanilla extract
- 2 eggs
- 1 egg white
- 1/2 cup brown sugar (packed)
- 1/2 cup sucanat
- 1/4 cup butter
- 1/2 cup dried cranberries
- 1/4 cup almonds (chopped)
Instructions
- Pre-heat oven to 350 degrees F. In medium bowl, combine flour, protein powder, baking powder, baking soda, oats, pumpkin spice and cinnamon. Set Aside.
- In mixer beat butter and sugars until creamy. Add eggs and egg white. Add vanilla and pumpkin until all is combined well.
- Half a cup at a time, add flour and oat mixture until all of the flour is absorbed.
- Mix in cranberries and chopped almonds if desired.
- Scoop batter with a cookie scoop and place 2 inches apart. Bake for 10 minutes.
- Allow to cool. Enjoy!
