Easy Crock Pot Pork Stew

Hi! You can call me Mrs. Motivated– or Sarah would do just fine. My goal is to humbly present and motivate all of you health-oriented mothers with recipes and fitness tips that can easily be applied to your lives each week. Being a military spouse, I am cost-conscious, and as a mother to a nine month old boy, I prefer things that are quick and easy to do.

This week I am trying to use up all of my food items in the refrigerator before going to the store to buy more groceries.  I find that more often than not, I tend to buy more than I need and then end up throwing out the expired food that I didn’t use. So yesterday I scoured the kitchen and stumbled upon these random ingredients that I used to make dinner: pork chops, baby carrots, an onion, and a can of tomatoes.

Walla, I decided to make an Easy Crock Pot Pork Stew! A low cost and low cal recipe for you moms. I only used what I had available at home– so you could definitely improve this recipe by adding more vegetables–but it still came out tasty! My point is to not be afraid to dig through your cabinets and see what’s going to waste in order to experiment with a new meal. Your Crock Pot will be your best friend when it comes to this method of cooking. Stews are so simple to make and a perfect end to a cold winter day.

Clean out your fridge and make some dinner!

Ingredients

  • 6 Pork Chops, thawed
  • One large onion
  • 2 bags of baby carrots
  • 2 cans of tomatoes
  • Vegetables of your choice (mushrooms, potatoes, green onions, celery and zucchini would all go great with this)
  • Parmesan Cheese
  • Garlic, Salt and Pepper (feel free to add any of your favorite seasonings)

Instructions

  1. Brown the pork chops by dipping them in flour, and add them to a pan of extra virgin olive oil on high heat.
  2. Once seared, add to the Crock pot.
  3. Dice onion and garlic
  4. Add onion, garlic, and vegetables to the Crock pot
  5. Season to your taste
  6. Cook on Low setting for six hours or until meat is tender
  7. Serve topped with Parmesan Cheese
  8. Enjoy!
