After seeing pics of stuffed sweet potatoes everywhere on Pinterest, I decided to give it a go and create my very own stuffed sweet potato recipe. I started by using my slow cooker, a pork tenderloin, and some of the sweet potatoes that were hanging out in my pantry. As for the barbeque sauce, I prefer to make my own. My favorite is our Skinny Barbecue Sauce. But, feel free to use a bottle of barbecue sauce that you have on hand if it is easier. Before you slather on your favorite Sweet Baby Ray’s flavor, try to buy a brand that has lower sugar content. Barbeque sauce is a notoriously sugar-filled condiment–it doesn’t get sweet all by itself, trust me.
These little potatoes turned out so delicious and surprisingly filling! I can’t believe I let those sit in my pantry for that long.
