After seeing pics of stuffed sweet potatoes everywhere on Pinterest, I decided to give it a go and create my very own stuffed sweet potato recipe.  I started by using my slow cooker, a pork tenderloin, and some of the sweet potatoes that were hanging out in my pantry. As for the barbeque sauce, I prefer to make my own. My favorite is our Skinny Barbecue Sauce. But, feel free to use a bottle of barbecue sauce that you have on hand if it is easier. Before you slather on your favorite Sweet Baby Ray’s flavor, try to buy a brand that has lower sugar content. Barbeque sauce is a notoriously sugar-filled condiment–it doesn’t get sweet all by itself, trust me.

These little potatoes turned out so delicious and surprisingly filling! I can’t believe I let those sit in my pantry for that long.

Pulled Pork Stuffed Sweet Potatoes

Prep time: 5 minutes

Cook time: 6 hours

Yield: 8 servings

Serving Size: 1 sweet potato, 4 oz pork, 3 tbsp sauce


  • 2 lb pork tenderloin
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 3½ cups BBQ sauce or Skinny Barbeque Sauce
  • 8 small sweet potatoes (around 5 inches each)


  1. In a small bowl, combine salt, black pepper, and onion powder to mix and make a rub.
  2. Rub pork tenderloin on both sides with mixture.
  3. Place pork tenderloin in slow cooker.
  4. Cover pork tenderloin with 2½ cups of barbecue sauce.
  5. Cover slow cooker with lid and cook for 6 hours on low heat or 3 hours on high heat.
  6. 15 minutes before pork tenderloin is heated through, place sweet potatoes in microwave until heated through.
  7. Remove pork tenderloin from slow cooker.
  8. Using two forks, shred cooked pork tenderloin and mix with remaining 1 cup barbecue sauce.
  9. Using a knife, slice sweet potatoes down the middle, creating an open center for pulled pork.
  10. Top each sweet potato with pulled pork and serve any additional pork on the side or save for later.
