Skinny Shrimp Stir Fry

Cook time: 7-10 minutes

Yield: 4 servings

Serving size: ½ cup of brown rice + 10 shrimp + veggies

Ingredients

  • ½ cup Uncle Ben’s® Boil-in-Bag Whole Grain Brown Rice
  • 1 tsp canola oil
  • 1 cup broccoli florets
  • ½ small green bell pepper, sliced
  • ¼ cup onion, sliced
  • ½ cup Baby Bella mushrooms, sliced
  • 5 medium-sized shrimp, deveined + peeled
  • ⅛ cup Kikkoman® Less Sodium Teriyaki Marinade & Sauce

Instructions

  1. Prepare rice according to package directions.
  2. In a wok or a deep, large fry pan, heat canola oil.
  3. Add broccoli, pepper, onion and mushrooms. Stir until cooked almost cooked through, about 5-7 minutes.
  4. Add shrimp and thoroughly mix with veggies. Continue cooking until shrimp is pink, about 2-3 minutes.
  5. Place ½ cup of brown rice in the bottom of a bowl. Top with stir-fry and drizzle with Teriyaki sauce.
