I always try to cook Sunday brunch for the family, and this past Sunday I had some extra bananas in my pantry, so I decided to create some Skinny Banana Mini Pancakes. I used whole wheat flour, brown sugar, and just a little banana extract and the pancakes turned out amazing. I was also able to put my new mini pancake skillet that I picked up from HomeGoods to use. The Nordicware brand skillet made making the mini pancakes really easy. I topped the pancakes with fresh bananas and sugar-free syrup, but you could also add some powdered sugar or other fresh fruit as toppings as well. Enjoy!
