Cooking Tip: It is really important to slice chicken breast in half to make it as thin as possible. If the chicken pieces are too thick they will not cook through and the asparagus will burn. Also, it is harder to roll up the chicken if it has not been sliced and pounded to a thin cutlet.

Asparagus and Cheese Stuffed Chicken

Yield: 4 servings

Serving size: 1 stuffed chicken breast

Ingredients

  • 2 boneless, skinless chicken breasts
  • 16 asparagus spears, washed and trimmed
  • 2 The Laughing Cow® Cheese Wedges, original Swiss flavor
  • ½ cup panko breadcrumbs
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • ½ tsp salt
  • 1 tsp onion powder
  • toothpicks

Instructions

  1. Preheat oven to 375 degrees.
  2. Spray a baking sheet with non-stick cooking spray.
  3. Cut each chicken breast lengthwise to make two equal size, very thin cutlets.
  4. Using the smooth side of a meat mallet, pound each chicken cutlet to make as thin as possible.
  5. In a medium size bowl, add panko bread crumbs, onion powder, black pepper, salt and garlic powder. Mix ingredients together.
  6. Slice each Laughing Cow cheese wedge in ½ to make 4 equal parts.
  7. Lay each chicken cutlet out on a flat surface.
  8. Add Laughing Cow Cheese piece to each chicken cutlet and spread to make thin and cover one side of chicken cutlet.
  9. Place 4 asparagus spears on top of cheese towards the bottom of each chicken cutlet.
  10. Using both hands keeping asparagus tight, roll each chicken cutlet and secure with 1-2 toothpicks.
  11. Dip rolled chicken cutlet into panko breadcrumb mixture, making sure to cover on all sides.
  12. Place rolled chicken cutlet seam side down on baking sheet.
  13. Spray rolled chicken cutlets lightly with non-stick cooking spray or butter spray.
  14. Bake rolled chicken cutlets for 20-25 minutes until cooked through or to at least 165 degrees at center if using a meat thermometer.
