When I hear “au gratin”, I think of one of my childhood favorite foods – creamy, cheesy potatoes. Believe it or not, I could eat at least half a box of au gratin potatoes myself, but we can all imagine how that leaves you feeling. In search of making this favorite recipe of mine into a healthier version, I swapped the potatoes with butternut squash. Let me tell you…it is absolutely divine and you don’t even miss the potatoes!
