I try to add fish to my meal plan on a weekly basis, but grilled or baked fish can get pretty boring after a while. In pursuit of adding a little zing to my fish recipes, I decided to combine my favorite salmon flavors with the classic burger style. These salmon burger patties are filled with great flavor, and the sauce infuses the patty with an even bigger taste you won’t be able to get enough of! Feel free to add the traditional burger toppings. I think some crisp lettuce and a juicy tomato would be great additions!

Skinny Salmon Burgers

Prep time: 10 minutes

Cook time: 20 minutes

Yield: 4 servings

Serving size: 1 salmon burger

Ingredients

    Burgers:
  • • 15 oz pink salmon
  • • 3/4 cup Italian style breadcrumbs
  • • 1/2 cup yellow bell pepper, diced
  • • 1/2 cup red onion, diced
  • • 1/4 tsp crushed red pepper flakes
  • • 1 large egg
  • Sauce:
  • • 4 Tbsp light mayonnaise
  • • 2 limes
  • • 1 Tbsp chili powder

Instructions

  1. Preheat oven to 375 degrees. Lightly coat a baking sheet with cooking spray and set aside.
  2. Combine breadcrumbs, salmon, yellow pepper, red onion, red pepper flakes and egg into a mixing bowl, mix thoroughly.
  3. Shape mixture into 4 equally sized burgers and evenly space on baking sheet.
  4. Bake for 20 minutes.
  5. While burgers are cooking, mix mayo, chili powder and the juice of 1 lime in a small bowl for the sauce.
  6. When burgers are cooked through, remove for oven and squeeze any remaining lime juice onto burger tops.
  7. Spread 1/2 Tbsp of sauce on each burger and serve hot.
  8. *Nutrition does not include bun (pictured). I recommend a 100 calorie sandwich slim to keep calories low.)
