I just love couscous! It’s so light, fluffy and yummy! And don’t even get me started on how easy it is to make! I love the juicy flavor that the pineapple and cucumber bring to the dish, and I think you will too! This vegetarian couscous is the perfect side to a chicken or fish dinner, and it is kid-approved…at least from my little man! If you’d like to bulk this dish up to a full blown salad with additional protein, I recommend some grilled shrimp as this flavor pairs perfectly with the fresh pineapple.

Skinny Pineapple Cucumber Couscous

Prep time: 15 minutes

Cook time: 5 minutes

Yield: 4 servings

Serving size: Almost 1 cup

Ingredients

  • 1 cup couscous, uncooked
  • 1 cup fresh pineapple, diced
  • ¼ cup lime juice
  • ¼ tsp cayenne pepper
  • ¼ cup fresh mint, chopped
  • 1 tsp light butter
  • 1 cup cucumbers, diced
  • 1½ Tbsp extra virgin olive oil
  • ¼ tsp salt

Instructions

  1. In a medium saucepan, bring 1 cup water, 1 tsp butter, and ¼ tsp salt to a boil.
  2. Add couscous, stirring quickly. Remove saucepan from heat and cover.
  3. Let couscous stand for 4-5 minutes and then fluff with a fork.
  4. Add lime juice, extra virgin olive oil, cayenne pepper, diced cucumber and diced pineapple to couscous.
  5. Using a spoon, gently mix all ingredients together, making sure the couscous is evenly covered.
  6. Add fresh chopped mint to couscous and toss gently to mix. Chill before serving.
