Easy Slow Cooker Beef Stroganoff

Prep time: 10 minutes

Cook time: 13-7 hours

Yield: 6 servings

Serving size: 1 cup


  • 1½ lbs lean stew meat
  • ¾ cup reduced-sodium beef broth
  • 2 Tbsp cooking sherry
  • 2 Tbsp Worcestershire sauce
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 Tbsp minced garlic
  • 1 cup onion, diced
  • 1 lb shiitake mushrooms, remove stems, sliced thin
  • 10 oz can 98% fat-free cream of mushroom soup
  • 1 cup reduced-fat sour cream or plain, non-fat Greek yogurt
  • 12 oz whole grain egg noodles
  • chopped parsley to garnish


  1. Place first 10 ingredients in the slow cooker and stir well.
  2. Cook on low for 6-7 hours or on high for 3-4 hours. When your cooking time is almost up, cook noodles according to package directions and add the sour cream (or Greek yogurt depending on which one you use) to the slow cooker and stir.
  3. Once noodles are ready add to the slow cooker and stir. Serve with a sprinkle of fresh chopped parsley.

I have been following your weekly recipes for 3 or 4 weeks now! Tonight is Slow Cooked Beef Stroganoff! I can’t wait to throw it in on my lunch and come home to another amazing dinner! My boyfriend and I are LOVING your recipes and they are really helping us get back on track health wise!! We have yet to eat a meal that wasn’t wonderful!!! Thank you so much!!!!

Am trying the beef stroganoff today, however using the same ingredients I am coming up with way more calories per serving. Without the noodles we are close to your count. But with noodles added we are at 453 and we didn’t even use the mushrooms! We love your recipes overall, but have never been able to match your counts exactly. Please advise…it would be appreciated.

Hi Lisa! You are absolutely correct! We had incorrectly calculated the nutrition on this recipe. Thank you for letting us know! We have since gone in and adjusted it so that the calories are now much closer to what you had calculated. The WWP+ changed slightly as well, as you will see.
