Easy Slow Cooker Beef Stroganoff

Prep time: 10 minutes

Cook time: Low for 6-7 hours or high for 3-4 hours

Yield: 8 servings

Serving size: 1½ cup


  • 1½ lbs lean stew meat
  • ¾ cup reduced-sodium beef broth
  • 2 Tbsp cooking sherry
  • 2 Tbsp Worcestershire sauce
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 Tbsp minced garlic
  • 1 cup onion, diced
  • 1 lb shiitake mushrooms, remove stems, sliced thin
  • 10 oz can 98% fat-free cream of mushroom soup
  • 1 cup plain, non-fat Greek yogurt
  • 12 oz whole grain egg noodles
  • chopped parsley to garnish


  1. Place first 10 ingredients in the slow cooker and stir well.
  2. Cook on low for 6-7 hours or on high for 3-4 hours. When your cooking time is almost up, cook noodles according to package directions and add the Greek yogurt to the slow cooker and stir.
  3. Once noodles are ready add to the slow cooker and stir. Serve with a sprinkle of fresh chopped parsley.

I have been following your weekly recipes for 3 or 4 weeks now! Tonight is Slow Cooked Beef Stroganoff! I can’t wait to throw it in on my lunch and come home to another amazing dinner! My boyfriend and I are LOVING your recipes and they are really helping us get back on track health wise!! We have yet to eat a meal that wasn’t wonderful!!! Thank you so much!!!!

This was delish! And husband approved! It took me ten minutes to throw it together this morning and then just ten minutes to cook noodles tonight. Fast, delicious, and low cal? I’m in love!!!!!

This was good! I halved the Worcestershire and found it to be plenty savory so I would keep it the same next time. I also sautéed the mushrooms separately adding only 3/4 of the cooking liquid back before stirring in the Greek yogurt to make it thicker. Yum!
