If you are anything like me, you’re always looking for more time during the day! It’s one of the many reasons I love my slow cooker, and more specifically, this Slow Cooker Chicken Provencal. This dinner only takes 10 minutes of prep time, and after 7 hours in the slow cooker, it comes out looking (and tasting) like a dish you took a lot of time with! I love this dinner just in a bowl on its own, but it is also amazing when put into my Skinny Chicken Tostadas [3]! If you have leftovers, I seriously recommend trying it both ways!

Slow Cooker Chicken Provencal

Prep time: 10 minutes

Cook time: 7 hours

Yield: 4 servings

Serving size: 1 cup


  • 1½ lbs boneless, skinless chicken breasts
  • 1 yellow bell pepper, diced
  • 1 red bell pepper, diced
  • 16 oz can cannellini beans, drained + rinsed
  • 14.5 oz can diced tomatoes
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 2 tsp dried basil
  • 1 tsp dried thyme


  1. Dice red and yellow bell peppers.
  2. Place all ingredients into a slow cooker, stir and cover with lid.
  3. Cook on low heat for 7 hours. If you are running late, the mixture will hold for 8 hours.

I made this for my family and would like to propose some changes. Firstly, leave out the beans. We felt they were dry and didn’t add any flavor. Secondly, toss in some garlic powder or minced garlic to taste. Finally, just before serving turn off the crock pot and put about 1 cup of low fat or fat free mozzarella cheese on top and cover until melted. I served this with baby reds which was great.

Do You cook the chicken first or just put it uncooked in the crock pot??

The first time I made it I found it bland and a little acidic so I made some changes. I added 1/2 an onion and some fresh minced garlic. I also added an extra can of diced tomatoes and I used a can of cannellini beans and a can of black beans. I used more salt and pepper (to taste) and added an extra 1 tsp of basil and 1/2 -1 tsp more of thyme. I also added two heaping tablespoons of brown sugar. Ups the sugar content but helped with the acidic taste I thought it had.

We loved it with the changes. Good luck!
