Easy Chicken and Rice Casserole

Cook time: 15 minutes

Yield: 6 servings

Serving size: About 1½ cup


  • 16 oz boneless, skinless chicken breasts
  • 2 cups Pacific® Organic Low Sodium Chicken Broth
  • 12 oz Birds Eye® Steamfresh® Frozen Broccoli Florets
  • 8.8 oz pouch Uncle Ben’s® Ready Rice® Whole Grain Brown Rice
  • 10.5 oz can Campbell’s® Healthy Request® Condensed Cream of Mushroom Soup
  • ½ cup water
  • ⅓ cup plain, non-fat Greek yogurt
  • ¼ tsp salt
  • ¼ black pepper
  • 1 cup Sargento® Reduced Fat Cheddar Shredded Cheese, divided
  • ¼ cup Panko bread crumbs


  1. Preheat oven to 350° F. Spray a 9x13-inch baking dish with nonstick cooking spray and set aside.
  2. In a large stockpot on high heat, add 2 cups of chicken broth to a boil. Add chicken breasts and cook for 25 minutes or until chicken is no longer pink in the middle. Remove breasts from water and set on a plate to cool. When cool enough to touch, shred chicken breasts with a fork.
  3. Microwave broccoli according to package directions and set aside.
  4. Microwave rice according to package directions and set aside.
  5. In a large bowl, mix soup, water, Greek yogurt, salt and pepper.
  6. Add chicken, broccoli, rice and ½ cup cheese to bowl. Use a large spoon to combine ingredients, making sure the soup mixture evenly covers all ingredients.
  7. Transfer chicken and rice mixture to prepared baking dish. Top with remaining ½ cup shredded cheese and bread crumbs.
  8. Bake uncovered for 20 minutes until cheese is melted and casserole is heated through.
