With Easter coming up this weekend, I decided to try out a homemade skinny fudge brownie recipe. I am hosting Easter brunch after church at my house and I wanted to make something easy for dessert that was low in calories but tasted delicious. I usually am a boxed brownie kind of girl because of the convenience, but I decided to try making the brownies from scratch and I am so happy with how they turned out!

I replaced the oil that most brownie recipes call for with applesauce and I decided to mix brown sugar, sugar, and Stevia for the sweetener.  I also added some fun M&Ms that are in festive pastel colors to top the brownies. All this chocolate goodness for only 88 calories and 2 WWP+ seems like the perfect Easter dessert to me! For a sweet little send-off, I’m going to wrap some brownies in an Easter themed to-go bag for my guests to take home Sunday evening.

Skinny Fudge Brownies

Prep time: 5 minutes

Cook time: 25 minutes

Yield: 12 servings

Serving size: 1/12 of pan

Ingredients

  • 1 cup white flour or substitute with 1 cup whole wheat flour
  • ½ cup unsweetened cocoa powder
  • ½ tsp salt
  • ½ tsp baking soda
  • 1 tsp baking powder
  • ½ cup Stevia (or your favorite sweetener)
  • ¼ cup brown sugar
  • ⅓ cup 1% milk
  • 1 egg, slightly beaten
  • 1 egg white, slightly beaten
  • 1 cup unsweetened applesauce
  • 2 Tbsp pastel M&Ms

Instructions

  1. Preheat oven to 350 degrees. Lightly coat a 9x13 baking dish with non-stick cooking spray.
  2. In a large bowl, sift together flour, cocoa powder, salt, baking soda, and baking powder.
  3. In a medium size bowl, beat brown sugar, Stevia, milk, egg, egg white and applesauce with a spoon until well mixed.
  4. Stir wet mixture into dry mixture until blended.
  5. Spread mixture evenly into pan. Carefully top mixture with M&Ms before placing in oven.
  6. Bake for 23-25 minutes until edges are brown and toothpick inserted in the center comes out clean.
