Recipe: Skinny French Country Salad

Prep time: 5 minutes

Cook time: 20 minutes

Yield: 4 servings

Serving size: 2 cups of spring mix, ¼ cup of beets, 2 oz cooked asparagus, 2 Tbsp of pecans, 2 Tbsp of Feta cheese

Ingredients

    Salad:
  • 8 cups spring mix green salad
  • 16 stalks of asparagus, wash + cut + quarter
  • ½ Tbsp extra virgin olive oil
  • ½ tsp black pepper
  • ½ tsp sea salt
  • ¾ cup reduced-fat Feta cheese
  • ¾ cup pecan pieces
  • 1 Tbsp Stevia® (or your favorite sweetener)
  • 1 cup Aunt Nellie's® pickled beets, sliced
  • Optional*:
  • Skinny Mom's Light Balsamic Vinaigrette
  • *Optional ingredients are not included in nutritional calculations.

Instructions

  1. Preheat oven to 350 degrees.
  2. Place cut asparagus in a small baking dish. Add extra virgin olive oil, salt, and pepper. Toss well to cover.
  3. Bake asparagus for 8-10 minutes until tender but still crunchy.
  4. On a small baking sheet, add parchment paper and add pecans.
  5. Generously spray pecans with nonstick cooking spray to cover both sides of pecans. Sprinkle Stevia® over pecans and toss to cover both sides.
  6. Bake pecans in oven for 8-10 minutes until toasted, and sweetener has started to melt.
  7. Combine all dressing ingredients in an air-tight container or jar. Shake to mix.
  8. In four large bowls or plates, add 2 cups of spring mix salad to each. Top each salad with ¼ cup of beets, 2 oz cooked asparagus, 2 Tbsp of pecans, 2 Tbsp of Feta cheese and drizzle with (optional) 2 Tbsp of Light Balsamic Vinaigrette.
