Skinny Shrimp Stir Fry

Cook time: 7-10 minutes

Yield: 4 servings

Serving size: ½ cup of brown rice + 10 shrimp + veggies

Ingredients

  • 2 cups Uncle Ben’s® Boil-in-Bag Whole Grain Brown Rice
  • 1 Tbsp canola oil
  • 4 cups broccoli florets
  • 2 green bell pepper, sliced
  • 1 cup onion, sliced
  • 2 cups mushrooms, sliced
  • 40 medium-sized shrimp, deveined + peeled
  • ⅛ cup low-sodium soy sauce

Instructions

  1. Prepare rice according to package directions.
  2. In a wok or a deep, large fry pan, heat canola oil.
  3. Add broccoli, pepper, onion and mushrooms. Stir until cooked almost cooked through, about 5-7 minutes.
  4. Add shrimp and thoroughly mix with veggies. Continue cooking until shrimp is pink, about 2-3 minutes.
  5. Place ½ cup of brown rice in the bottom of a bowl. Top with stir-fry and drizzle with soy sauce.
