There are a few things that I never get sick of eating, and one of them is quinoa salads. This Asian Quinoa Salad from Two Peas & Their Pod is a dish that I could eat every single day! It's delicious, healthy, and looks so pretty when it's made that you won't want to eat it (but you won't be able to resist). This salad has edamame, red cabbage, carrots, red pepper, cucumber, and cilantro, but is very flexible to add some of your favorite veggies. The final addition is a simple ginger soy dressing which makes the meal a hit! Enjoy!
