Serving size: 1 stuffed breast


  • 4 – 4 oz boneless, skinless chicken breast
  • 4 slices reduced-fat Swiss cheese
  • 8 slices reduced-sodium ham
  • 1 cup panko breadcrumbs
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 egg
  • 2 egg whites


  1. Preheat oven to 350. Lightly spray a casserole dish with nonstick cooking spray, set aside.
  2. Using a small, serrated knife, cut chicken breast almost in half, like a pocket. Be careful not cut all the way through.
  3. Place 2 pieces of ham and 1 piece of cheese in each pocket. Tuck in any ham or cheese hanging out.
  4. In one shallow bowl, mix panko, pepper, garlic and onion powder. In another, beat your eggs.
  5. Carefully dip your stuffed chicken into the egg mixture and then into the panko - both sides.
  6. Transfer chicken to the casserole dish and place in oven. Cook for 25-30 minutes or until chicken is cooked through.
