There is something about a good cup of eggnog that puts me into the Christmas spirit, especially when the eggnog is on the lighter side.  This recipe for Skinny Eggnog is SO easy to make. Just 6 ingredients, and the results are a cup filled with holiday cheer! This recipe is also great for adding your favorite bourbon or rum for your holiday celebrations!




Recipe: Skinny Egg Nog

Prep time: 2 minutes

Cook time: 15 minutes

Yield: 6 servings

Serving size: ½ cup


  • 2½ cups unsweetened almond milk
  • 2 whole eggs + 1 egg white
  • ⅓ cup sugar
  • 1 tsp cornstarch
  • 1 tsp vanilla extract
  • cinnamon to taste
  • nutmeg to taste
  • Optional Topping*:
  • light whipped cream
  • *Optional ingredients are not included in nutritional calculations.


  1. Put the milk in saucepan over medium-low heat. Add vanilla extract and heat for about 5 minutes until it steams, not boils.
  2. In a large bowl, whisk together eggs, egg white, sugar and cornstarch til frothy, about 2 minutes. This mixture will turn yellow.
  3. Now you will need to temper the eggs. To do this, slowly start adding the warmed milk to the egg mixture. Do small amounts at a time and whisk constantly.
  4. Once you have added all the milk, pour the mixture back in to the saucepan and heat on medium. You will want to now use a wooden spoon and stir the mixture constantly until the eggnog begins to thicken. This will take about 6-8 minutes. A good rule of thumb is if you can slide your finger up the back of the wooden spoon and the liquid stays parted than it has thickened enough.
  5. Once it has thickened, sprinkle in cinnamon and nutmeg.
  6. Serve immediately topped with (optional) whipped cream or this recipe can be served chilled by refrigerating for 24 hours before serving.
