We want to make sure our recipes are juuust right before we share them with our readers, so we have reworked an older version of this recipe into a new and improved creation! This recipe is skinnier, tastier and better than ever thanks to a tiny bit of tweaking, and we know you’ll love it.

Skinny Pumpkin Pie

Prep time: 10 minutes

Cook time: 1 hour and 45 minutes Yield: 8 servings

Serving size: 1 slice


    Pie Crust:
  • 1 cup all-purpose flour
  • ½ teaspoon sugar
  • ⅛ teaspoon baking powder
  • ⅛ teaspoon salt
  • 3½ tablespoons canola oil
  • 2-3 tablespoons cold water
  • Pie Filling:
  • 15-ounce can 100% pumpkin puree
  • 1 cup Silk® Unsweetened Original Almondmilk
  • 3 egg whites, beaten
  • ⅓ cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ¼ teaspoon allspice
  • ¼ teaspoon clove


  1. Pie Crust:
  2. In a medium mixing bowl, whisk together the flour, sugar, baking powder and salt.
  3. In a small mixing bowl or measuring cup, stir together the oil and water with a fork to combine.
  4. Pour the oil and water mixture into the dry ingredients and stir together with a fork until evenly moistened. Add more cold water one teaspoon at a time if needed, until moistened.
  5. Transfer the dough to a 9-inch pie dish and press the dough evenly along the bottom and sides of the pie dish. The crust is going to be very thin, so be careful not to tear holes in it.
  6. Crimp the edges, or press with the tines of a fork as desired, then set aside until ready to fill.
  7. Pie Filling:
  8. Preheat the oven to 400° F.
  9. In a large mixing bowl, stir all of the ingredients together until thoroughly combined.
  10. Pour the filling in the set-aside pie shell and place the pie on a cookie sheet to put into the oven.
  11. Bake for 15 minutes, then lower the oven temperature to 350° F, and continue baking for 1½ hours, or until the center is set.
  12. Allow the pie to come up to room temperature on a cooling rack for at least an hour before serving.
