21 Day Shred

Now that the weather is getting colder outside, there is nothing better to warm you up than a bowl of delicious white chicken chili. This delish (and skinny) chili dish is perfect for those cold winter days or when you’re serving a large group, better yet, when you’re serving a large group on a cold winter day! Skinny White Chicken Chili

Prep time: 10 minutes

Cook time: 20 minutes

Yield: 6 servings

Serving size: 1.75 cups


  • 16 oz boneless, skinless chicken breasts
  • 2 cups Pacific® Organic Low Sodium Chicken Broth
  • 3 — 14.5 oz cans white beans, rinsed + drained
  • 4 oz can diced green chile peppers
  • 1 onion, diced
  • 2 Tbsp minced garlic
  • 1 tsp chili powder
  • 2 tsp cumin
  • 1 tsp cayenne pepper
  • ½ tsp oregano
  • 2 tsp extra virgin olive oil
  • Optional toppings*:
  • reduced-fat, shredded Mexican cheese blend
  • reduced-fat sour cream
  • fresh cilantro, chopped
  • *Optional ingredients are not included in nutritional calculations.


  1. In a large stockpot on high heat, add 2 cups of chicken broth to a boil. Add chicken breasts and cook for 25 minutes or until chicken is no longer pink in the middle. Remove breasts from broth and set on a plate to cool. Keep the chicken broth and set aside. When cool enough to touch, shred chicken breasts with a fork.
  2. Meanwhile in a separate large stock pot, heat extra virgin olive oil over medium heat.
  3. Add onions and stir until the onions are traslucent.
  4. Add in the minced garlic, green chile peppers, cumin, oregano, chili powder, and cayenne pepper. Continue to cook and stir ingredients together for 2-3 minutes until everything is tender.
  5. Add in reserved chicken broth, shredded chicken and white beans.
  6. Simmer for 20-25 minutes, stirring occasionally.
  7. Serve with reduced-fat sour cream, reduced-fat, shredded Mexican cheese blend, and fresh cilantro.
