Cooking for one isn’t the glamourous, luxurious task that we sometimes see in movies. Rarely is the single person delighted at the thought of slaving in the kitchen just to sit at a table set for one. And rarer still is the person who spends 45 minutes prepping a dish to be eaten in front of the TV, while catching up on last night’s missed episodes. Here are three ways to eat more healthfully at home without spending hours in the kitchen or having heaps of leftovers!

1. Lo Mein with Kale and Egg: We love kale here at Skinny Mom and some think an egg is a perfect food. Add some lo mein noodles and it’s a meal! You could swap out the egg for a baked chicken breast or pan fried strips of pork. (via Roti n Rice)

2. Poached Eggs and Vegetables: This well-rounded meal can be prepped ahead of time and the egg poached just before dinner. (via NY Times)

3. Cauliflower Pizza Bites – Make these ahead of time and store them in your freezer. Pop a few out to reheat and pair with a crisp green salad for a complete meal. (via Damy Health)
