Have you tried spaghetti squash yet? I don’t know what took me so long, but after coming across several stuffed spaghetti squash recipes online, I could no longer resist. A few weekends ago I gave it a try; it was awesome! So delicious and so pretty. These squash immediately went to the top of my list of what to serve next time we have guests. You can really customize them based on different tastes or ingredients that you have on hand.
The steps are the same in all of the variations. First cook and shred your squash. You can roast, boil or even microwave it. Mix it with delicious ingredients of your choosing. Then put the filling back into the squash and quickly roast again.
Here are a few of my favorite variations that I’ve found and added on my must try list. Trust me, it’s worth it!
Spaghetti Squash with Turkey Meatballs: The whole family will enjoy this healthy take on classic spaghetti and meatballs. Reduce the carbs by using spaghetti squash instead of pasta, plus reduce the fat by using turkey instead of beef. Serve in a bowl or use the squash itself.
Sensational Stuffed Spaghetti Squash: This veggie packed spaghetti squash is full of lots of healthy ingredients. Top with a little cheese to make these squash irresistible. (via Sweet Tooth Sweet Life)
Spinach Bacon Alfredo Spaghetti Squash Boats: The kids will hear “alfredo” and come running! Not only have you cut the carbs by not using pasta, but you’ll also be making a creamy cheesy alfredo sauce out of cauliflower to cut the fat. (via The Skinny Fork)
