I am definitely one of those people that given enough time and all the resources possible, loves to be in the kitchen whipping up a storm. However, I am also a mom to a very active and rambunctious 20-month-old daughter who unquestionably voids me of all time and energy, but who also loves to eat and try new foods, just like her father. Therefore, the idea of a quick yet nutritious meal that is going to be loved by the whole family is always welcome in my household. When I discovered Flatout Foldit® flatbread, I could just see a world of new and exciting possibilities for meals I could whip up in less than 30 minutes with a toddler “helping out.” Going back to my Mediterranean roots, I decided to create a Lebanese-inspired lamb recipe, using the freshness of Greek yogurt, tomatoes, cucumber and mint to balance out the rich yet lovely flavor of lamb and all the spices synonymous with the region.

What I love most about this recipe is that it is versatile and can be enjoyed by adults and kids alike, so there’s no need to make separate meals for the little ones. These pitas are also wonderful for little hands since they are manageable for them to hold onto. It’s also a great way to sneak in some veggies for picky eaters! If you’re prepping ahead of time, I suggest you prepare the lamb filling and pre-cut the vegetables, refrigerate and then grill and fill the flatbread just before eating in order to avoid them getting soggy.

Kid-Friendly Lebanese-Inspired Lamb Pita

Ingredients

  • 8 Flatout Hungry Girl Foldit® Flatbread
  • 1 lb ground lamb
  • 4 scallions (finely chopped)
  • 1 tsp extra virgin olive oil
  • 2 tsp turmeric
  • 2 tsp ground coriander
  • 4 tsp cumin
  • ½ tsp sea salt
  • 1 16-oz tub Voskos Greek Yogurt
  • 1 cucumber (julienne & deseeded)
  • 1 tomato (sliced & deseeded)
  • a bunch of fresh mint leaves

Instructions

  1. In a large skillet heat the olive oil, and add the scallions, lamb, turmeric, coriander, cumin and sea salt. Over high heat combine the mixture while breaking any large lumps of lamb.
  2. When the meat starts to brown, reduce the heat, add a handful of mint leaves and stir frequently for around 10 minutes or until the meat is no longer pink and there is no liquid remaining in the skillet.
  3. While the meat is cooking, prep the cucumbers and tomatoes by removing the seeds and cutting them into thin strips.
  4. When the meat is cooked, take off the heat and set in the refrigerator for around 10 minutes to allow it to cool. Take it out of the fridge and stir in ½ cup of Greek yogurt.
  5. Heat the Flatout® flatbread in a grill until warm.
  6. Spread a thin layer of Greek yogurt on the flat bread, scoop 2 tablespoons of the lamb mixture on one side of the flat bread and the tomatoes and cucumbers on the other side.
  7. Sprinkle with mint leaves, fold and ENJOY!
