Few flavors bring warm, fall feelings as much as butternut squash! I love this stuff, and Rachel's take is amazing! Her recipe brings in so many good and good-for-you flavors like kale, quinoa and green onions! Every single bite of this dinner is amazing! While this dish certainly has low-carb covered, if you want to make it a little lighter you can always make skinny swaps with turkey bacon and light cheese!
