Back-to-school and busy work days make for crazy mornings and the thought of squeezing in a hot and healthy breakfast seems impossible.  I want to help make a hot and healthy breakfast a reality for you and your kids by sharing this quick and easy recipe for a Skinny Sausage and Egg McMuffin.  This is our Skinny Swap on the full fat version that you could pick up at a fast food drive-through and you will save 150 calories and 15 grams of fat.  I have replaced the english muffin with a Thomas Brand light english muffin that is loaded with fiber.  I swapped out the full fat sausage for a turkey sausage patty and topped it with a thin slice of Sargento reduced-fat cheese.  I like to add a little Smuckers All-Natural Jelly on top for a little sweetness but that is completely optional.  You can cook this in less than 3 minutes and be out the door and on your way.  Enjoy!

Skinny Swap: Sausage and Egg McMuffin

Ingredients

  • 1 light multigrain English muffin (I used Thomas Brand)
  • 1 egg
  • 1 slice reduced-fat cheddar cheese
  • 1 turkey sausage patty
  • Optional*:
  • 1 tsp all natural preserves
  • *Optional ingredients are not included in the nutritional calculations.

Instructions

  1. Toast muffin in a toaster.
  2. Cook egg over medium heat.
  3. Microwave sausage for 30-45 seconds.
  4. Assemble sandwich and enjoy.
