Zucchini- Rosemary Pasta

This dinner is gluten-free, paleo, and vegan. And I could eat it all day long! It's amazing! I'm a huge fan of using zucchini pasta, and this dish really lets the zucchini shine! They are simply mixed with onions and mushrooms, and then topped with the most incredible Rosemary Butternut sauce. The recipe calls for regular coconut milk, but you can swap that out for the light version and get the same warm, wintery, cozy flavor! If you haven't tried making zucchini pasta, it's as easy as picking up a spiralizer and having at it! It's a gadget you'll love having around the kitchen!
